Ouroku Sake Brewery – Sake Is Alive
Founded in 1872 in Higashi-Izumo, Shimane, Ouroku Sake Brewery has built its identity around a simple but uncompromising belief: sake is alive.
The brewery refuses to filter its sake, avoiding activated charcoal so that the finished drink retains its natural character. Most of its sake is also left unpasteurized, bottled immediately after brewing and stored at sub-zero temperatures to preserve its freshness and evolution.
Ouroku takes the same uncompromising approach to blending. Rather than combining different batches to create a uniform profile, each tank is kept separate, allowing subtle differences between brews to remain part of the experience.
Using carefully cultivated Yamada Nishiki from Higashi-Izumo and exceptionally pure water from the brewery’s celebrated Golden Well, Ouroku creates sake with vivid acidity, depth and remarkable energy.
This is sake deliberately left alive — expressive, individual and constantly evolving.
