Founded in 1636, Hatsukame Sake Brewery is the oldest sake brewery in Shizuoka and one of Japan’s historic brewing houses. For nearly four centuries, the brewery has remained dedicated to refining the art of sake, with an early and lasting focus on the delicate craft of Ginjo brewing.

Located in Okabe, surrounded by tea fields, mountains and the pristine waters flowing from the Southern Alps, Hatsukame draws deeply from the character of Shizuoka. Their sake is defined by elegant aromas, a soft texture, balanced acidity and refined umami — a style created to complement the region’s exceptional food culture.

Hatsukame has never been afraid to pursue excellence. From its award-winning Daiginjo in the 1960s to the legendary Kame, once Japan’s most expensive sake, the brewery has helped shape the world of premium sake.
