Nakao Sake Brewery – The Art of Innovation
Founded in 1871 in Takehara, Hiroshima, Nakao Sake Brewery has built its reputation on a combination of tradition, scientific curiosity and a willingness to experiment.
The brewery is best known for its two distinctive brands, Seikyo and Maboroshi. While Seikyo represents the brewery’s long-established identity, Maboroshi expresses its pioneering spirit. In the 1940s, the fourth-generation brewer developed an original apple yeast, creating a distinctive style of Ginjo sake with an elegant, aromatic character.
Nakao has continued to explore the science of fermentation, developing its own high-temperature saccharification method and introducing new techniques while remaining firmly rooted in traditional craftsmanship.
Today, the brewery continues to work with carefully selected rice and local brewing traditions in Takehara, creating sake that balances depth and refinement with a clear sense of individuality.
