NOGUCHI NAOHIKO SAKE INSTITUTE – The Legacy of a Master
Founded in 2017 in the mountain village of Kanagaso, Ishikawa, NOGUCHI NAOHIKO SAKE INSTITUTE was created to preserve and carry forward the knowledge of legendary master brewer Naohiko Noguchi.
Noguchi became a Toji at just 28 and went on to spend more than 70 years refining his craft. Widely regarded as one of the great figures of the Noto Toji tradition, he played a key role in reviving the demanding Yamahai brewing method and built his philosophy around a simple ambition: to make sake that brings people happiness.
Today, Noguchi works alongside a younger generation of brewers, combining his accumulated knowledge and decades of handwritten records with modern technology and data. The brewery uses pristine underground water from Mount Hakusan and embraces ageing as an essential part of the sake’s evolution.
The result is sake with depth, structure and remarkable longevity — a living expression of one master’s lifelong pursuit of excellence.
