With roots stretching back to the Edo period, Hiroki Shuzo Honten is a small brewery in Aizubange, Fukushima, where generations of craftsmanship meet a remarkable story of renewal.
When ninth-generation brewer Kenji Hiroki took over the brewery, it was facing the possibility of closure. In 1999, he released Hiroki — an unfiltered, unpasteurized and undiluted sake that challenged the conventions of the time. Its vibrant character quickly captured the attention of sake enthusiasts across Japan and helped pioneer a new appreciation for this style of sake.
Today, Hiroki is one of Japan’s most sought-after sake brands, while the brewery remains firmly rooted in Aizu. Using locally grown rice and meticulous small-batch brewing, Hiroki Shuzo Honten continues to pursue sake with clarity, depth and a strong sense of terroir.
