Nabedana – Sake Rooted in Chiba
With roots dating back to 1689, Nabedana is one of Chiba’s historic sake producers. Originally brewing near Naritasan Temple, the family has carried its knowledge of sake making through more than three centuries, today operating its brewery in the riverside town of Kozaki.
Under the names Jinyu and Fudoh, Nabedana combines traditional craftsmanship with carefully selected sake rice, including Yamada Nishiki, Miyama Nishiki and Chiba-grown Sounomai. The brewery’s approach is meticulous, from rice polishing and koji making to fermentation, pressing and maturation.
Fudoh in particular represents the brewery’s more refined expression, earning repeated recognition in national sake competitions for both Ginjo and Junmai Ginjo.
Yet Nabedana remains deeply connected to the traditional experience of sake — not simply as a drink, but as part of Japanese culture and everyday life.
