Nakashima Sake Brewing – The Taste of Mino
Founded in 1702 in Mizunami, Gifu, Nakashima Sake Brewing has been crafting sake for more than three centuries. Under the name Kozaemon, the brewery expresses the distinctive character of the Mino region through a combination of local rice, mineral-rich underground water and careful craftsmanship.
The brewery’s water flows through ancient geological strata beneath Mt. Byobu, giving it a soft yet mineral-rich character that brings depth and flavour to the sake. Rather than pursuing an extremely light and dry style, Nakashima focuses on umakuchi sake — fragrant, rounded and rich in umami, with enough structure to complement a wide range of food.
From elegant Junmai Ginjo to richer and more mature expressions, Kozaemon explores different dimensions of flavour while remaining firmly connected to its local landscape.
