Masuda Tokubee Shoten – Tradition with a Spirit of Innovation
Founded in 1675 in Kyoto’s historic Fushimi district, Masuda Tokubee Shoten is one of Japan’s oldest sake breweries. Yet its long history has never meant standing still. Brewing under the name Tsuki no Katsura, the brewery has built its identity around individuality, seasonality and a willingness to challenge convention.
In 1964, the 13th generation created Japan’s first sparkling nigori sake, opening a new chapter in modern sake. The following year, the brewery began aging Junmai Daiginjo in porcelain vessels, pioneering a distinctive style of mature sake.
Today, Masuda Tokubee Shoten continues to brew only during the coldest months, respecting the natural character of rice and water while exploring new expressions of sake. From locally grown sake rice to low-alcohol styles, the brewery combines deep Kyoto heritage with an unmistakably forward-looking spirit.
