Rannei – Craft Sake of Norway
Rannei is crafted in the deep valleys of Setesdal in Southern Norway – a place defined by pure mountain water, long winters and a culture of fermentation rooted in tradition.
The journey behind Rannei is deeply personal. After several years living in Japan, and with close ties to the culture through family, our founder trained at Daimon Shuzo in Osaka. It was there the potential of shiro-koji first became clear – not only as a technical choice, but as a way to shape a different expression of sake.
Back in Norway, this foundation was combined with local knowledge and ingredients. We brew with exceptionally soft water from the Ose source and Yamada-Nishiki rice, while fermenting with traditional Norwegian kveik yeast. These extraordinary yeasts, genetically closer to sake yeast than to continental beer strains, contribute a subtle fruit character and allow for a more expressive fermentation.
