Tosa Brewing – Sake from the Mountains of Kochi
Founded in 1877 in Tosa Town, Kochi, Tosa Brewing is surrounded by the mountains, forests and terraced rice fields of the Tosa-Reihoku region. Here, the natural environment is not simply a backdrop to brewing — it is part of the sake itself.
The brewery works with the region’s exceptionally soft water and locally grown sake rice, including Gin no Yume, a variety developed in Kochi and particularly suited to brewing. Small-scale production and careful handcrafting allow Tosa Brewing to express the purity and character of these local ingredients.
Best known through its Keigetsu brand, the brewery combines this strong connection to place with a modern, exploratory approach. Its brewing research extends from the microorganisms found in the rice fields to fermentation in the kura, while its sake is designed to work beyond traditional Japanese cuisine — from French dishes to desserts.
