Miyasaka Brewing – The Birthplace of Yeast No. 7

Founded in 1662 in Suwa, Nagano, Miyasaka Brewing is the historic brewery behind Masumi, one of Japan’s most respected sake brands. Its greatest contribution to sake, however, may be something far less visible: the discovery of Brewing Association Yeast No. 7.

In 1946, researchers identified this exceptional yeast in Masumi’s fermentation tanks. It soon became one of the most widely used sake yeasts in Japan, prized for its ability to produce clean, balanced and beautifully harmonious sake.

Today, Miyasaka has returned to its roots, using proprietary strains descended from Yeast No. 7 while continuing to explore new techniques and expressions. Its sake is shaped by the cold alpine climate of Nagano, pure mountain water and carefully selected local rice.

For Miyasaka, tradition is not about standing still. It is about understanding what has come before — and using that knowledge to create better sake for the future.

Born from tradition. Driven by discovery.
