TSUJI Co., Ltd. – The Spirit of Omachi
Founded in 1804 in Katsuyama, Okayama, TSUJI Co., Ltd. has been crafting sake for more than two centuries. Today, the seventh generation of the Tsuji family continues this legacy, with siblings Soichiro and master brewer Maiko Tsuji leading the brewery into a new era.
At the heart of Gozenshu is Omachi — Japan’s oldest native sake rice variety, deeply rooted in Okayama. TSUJI is committed to bringing out its full potential, using locally grown Omachi rice alongside soft, pristine water from the Asahi River.
The brewery is also a pioneer in reviving Bodaimoto, one of Japan’s oldest sake-brewing methods. By combining this ancient technique with a modern approach to brewing, TSUJI creates sake with remarkable depth, umami and character.
