Koueigiku Shuzo – A New Chapter in Sake
Rooted in a historic brewery in Ogi, Saga, Koueigiku Shuzo represents a remarkable new chapter in Japanese sake. After the original brewery ceased operations, it was revived in 2019 by a passionate new team determined to bring the Koueigiku name back to life.
Led by Master Brewer Katsuaki Yamamoto, the brewery has quickly developed a distinctive style built around vibrant acidity, expressive fruit character and rich umami. Many of their sake are unfiltered and unpasteurized, preserving a sense of freshness and energy that has made Koueigiku a favorite among a new generation of sake enthusiasts.
Surrounded by the mountains of Saga and the Ariake Sea, Koueigiku combines a historic setting with a decidedly contemporary approach to brewing.
